Slow Cooked Corned Beef Hash

The Roundabout is rightly famous for their corned beef hash.

Adapted from Roundabout Diner

Makes 12 servings

¼ cup bacon grease (or olive oil)
5 pounds red bliss potatoes, diced small
2 cups diced onions
2 cups diced green bell peppers
1 carrot, minced
2 ribs celery, minced
2 pounds cooked corned beef, diced
1 cup beef broth
salt to taste
freshly ground black pepper to taste
granulated garlic to taste

1. In a very large skillet, melt bacon fat over medium heat. Add potatoes, onions, bell peppers, carrot, celery, and corned beef. Stir often and slowly. Increase heat to break down corned beef. Cover to let potatoes steam, about 45 minutes, still stirring occasionally.
2. When potatoes are cooked and corned beef is rendered, add broth. Season with salt, pepper, and granulated garlic and mix thoroughly. Taste for seasoning, transfer to a serving platter, and serve.
