Adapted from The Roundabout Diner Makes 2-4 servings 4 cups ice cubes1 cup pineapple juice½ cup blue Curacao½ cup crème de coconutsugar rim1 pineapple garnish Mix ice cubes and the ingredients in a blender, then serve with sugar rim and pineapple garnish.
