This recipe makes a generous amount of guacamole—great for a party. Serve with tortilla chips.
Adapted from Dos Amigos Burritos
Makes 16 servings
1 cup diced red onions
¾ cup chopped cilantro, plus additional for garnish
3 ounces lime juice
2 teaspoons salt, or to taste
2 teaspoons freshly ground black pepper, or to taste
2 tablespoons chopped garlic
10 avocados
tortilla chips for serving
1. In a large bowl, stir together onions, cilantro, lime juice, salt, pepper, and garlic.
2. Halve avocados and remove pits. Use a large spoon to remove the flesh and add to the bowl. Mix well but leave grape sized chunks of avocado for texture. Taste and add seasoning as needed.
3. Garnish with cilantro and serve with tortilla chips on the side.
